What was the BBQ challenge of week 6?

The challenge began with splitting the team into two groups of five contestants each. Anthony Jones and Justin Tootla were the two team leaders, and yes, there was a twin brother face-off. The rules featured a five-round, one-dish made by one chef that would feature one part of the hog. The winner of each round got a chance to win USD 5K, and along with that, the team of two, who would win the most matchups, got immunity, which means they became safe from elimination borders.

How did Sieger Bayer lose the challenge and get eliminated?

Speaking of how Sieger Bayer was eliminated, he had a face-off with Laurence Louie in round 2. While in Top Chef, Week 6, Louie's dish was roasted pork loin with crispy skin XO sauce, Siege made roasted pork loin with crispy pig ear terrine and mustard-based carrot sauce. The winning point in Louie's case was that his team took the hog off the smoker and cut the loin without taking any risk of overcooking it, while Sieger, an executive chef and owner of bar Berria in Chicago, kept the hog in the cooker for hours without even lifting the lid once.

Well, it was surely a critical technical error in the case of BBQ, since to overcook the leanest part of the hog, the loin, means it would dry out. A similar result occurred with Seiger's dish, which led him to lose in front of his opponent, Laurence.
