Ingredients:

  • 5 cups roughly chopped tomatoes
  • 1/4 cup yellow moong daal (split yellow gram), washed and drained
  • 1 teaspoon low-fat butter
  • 1/2 cup finely chopped onions
  • 2 teaspoon sugar
  • 1/2 cup low-fat milk, 99.7% fat-free
  • Salt to taste
  • 1 teaspoon freshly ground black pepper (kalimirch)

Method:

In a non-stick kadhai, add 4 cups water, tomatoes and moong daal. Cook on a medium flame till 10 minutes. Keep stirring. Remove from heat and keep aside to cool. Blend in a mixture till its smooth. Now heat some butter in a pan and sauté the onions till brown in colour. Add the tomato-moong daal mixture, sugar, low-fat milk, salt and pepper and mix well. Bring to a boil, while stirring occasionally and simmer for 5 minutes. Have it hot with toasted bread.

  • 4 cups broccoli florets
  • 1/4 cup chopped onions
  • 1 small carrot diced

  • 1/2 cup pearled barley, cooked
  • 5 cups vegetable broth
  • 1 canned tomatoes
  • 4 cloves garlic, minced
  • 1/4 teaspoon dried marjoram (a cooking spice made of herbs)

Method:

Cook onion in olive oil over medium heat for 4-5 minutes until soft. Add vegetable broth and bring to a boil. Reduce to a simmer and add celery and carrots along with broccoli florets. Cover and let it boil, until carrots and broccoli florets are tender. Add cooked barley, canned tomatoes, garlic and marjoram. Let it simmer for another minute or two. Season it with salt and pepper.

Ingredients:

  • 1 lb. zucchini, diced and unpeeled
  • 1 tablespoon butter (optional)
  • 3 tablespoon olive oil
  • 1 clove garlic
  • 2 eggs
  • 10 basil leaves (optional)
  • 2 oz. white cheese (optional)
  • Salt and pepper as per taste
  • 2 tablespoon parsley
  • A few croutons

Method:

Heat oil/butter and garlic in a saucepan until garlic turns golden. Add zucchini and cook for a few minutes. Add boiling water, salt and pepper. Cook gently for about 15 minutes. Break eggs into a warmed soup tureen and add chopped basil, parsley. Grate in cheese if required. Beat well with a fork. Gradually add about a quarter of the soup and mix well, then pour in the rest. Garnish with more grated cheese and freshly made croutons.

Sauté onions, celery and butternut squash in olive oil for 5-7 minutes. After the ingredients soften, add garlic, red pepper flakes, salt and pepper and sauté for 1 more minute. Add kidney beans, tomatoes, spinach, kamut, vegetable broth and Parmesan cheese (optional). Cover and bring to boil using medium heat. Reduce the heat, let it simmer and stir occasionally, until the kamut is tender. Serve hot.

Method:

Place red bell peppers, onions, garlic, jalapeno and tomatoes in a saucepan with vegetable broth and bring to a boil over medium heat. Once the veggies are tender, puree it in a blender. Cool the soup and add the fresh herbs.

  • 3-4 ounces boneless skinless chicken breasts

  • 1 teaspoon olive oil

  • 2 cloves garlic, minced
  • Carrots and cherries (2 each chopped)
  • 1 green bell pepper, 1 jalapeno (chopped)
  • 1 tablespoon chilli powder
  • Cumin, pepper, turmeric and paprika (1/2 teaspoon each)
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 4 cups low-sodium chicken broth
  • 2 cups frozen corn
  • 1 15 ounce can black beans, rinsed and drained
  • 3/4 cup fresh cilantro, divided
  • 1 cup 2% shredded Mexican cheese blend, for garnish
  • 4 whole-wheat tortillas, for garnish
  • 1 lime, cut into wedges, for garnish

Method:

Take chicken pieces in a large pot and cover with about 1 inch water adding salt. Place on medium-high heat and bring to a boil until internal temperature in thickest part of chicken reaches 165 degrees. Transfer chicken to a large bowl and shred with two forks. Now, heat oil over medium heat in a large pot.

Add onions and garlic, and cook until translucent. Meanwhile add tomatoes, carrots, green pepper, and jalapeno to a blender and mix until blended but still chunky. Once onions are done, add spices and 1 teaspoon salt to the pot and cook for 1 minute. Add shredded chicken, tomato mixture, chicken broth, corn, beans, and 1/2 cup cilantro. Add 1 cup water if soup is too thick for your taste. Simmer until corn is tender and flavours develop. Add more salt if necessary.
